Day Six

Yep, I know- I skipped posting on Days 3-5. So sorry, we got really busy around here and I didn't get a chance to post.  You didn't miss much, really; there were a few recipes we had no desire to try; so we repeated the ones from the previous days.
We did like the bean and rice burritos though, and will most definitely be making those again! They were really easy and quick to make.  All you need:

2 cans of pinto beans (low sodium)
1 pkg whole wheat tortillas
1-2 cups of cooked brown rice

Toppings: scallions, lettuce, oil free salsa

Drain and rinse the beans, mash them with a potato masher. Mix in your rice and put in a saucepan. Add water- about 1/2 cup- 1 cup and stir occasionally while it heats up.  Spoon the bean mixture down a warmed tortilla. You can add your toppings inside the tortilla, or roll up tortilla and put them on top.
We served these with freshly made guacamole and tortilla chips.  Yum!

Here's what we've eaten today:

Breakfast  Kris fried up some no oil southern style hash brown diced potatoes, served with wheat toast with pure fruit jam.
I had cold organic all natural shredded wheat cereal topped with fresh blueberries and almond milk. It was quite good.

Lunch I didn't see what Kris took to work with him for lunch. I fried up some of the above potatoes with onion and mushrooms, topped it with hot sauce and rolled in a whole wheat tortilla.

Dinner Making Cajun Rice and baked potato, salad.

Kris-- so far lost 1.5 lbs as of two nights ago. My guess is he has lost a little more since then.
Jody-- haven't weighed myself yet since the first day. Will do tonight.

How we feel: I feel pretty good now! The first three nights I had bad headaches. These were most likely withdrawal headaches from meat, dairy, and caffeine.

I almost cheated the other night-- I was lying in bed feeling quite sick to my stomach, and craving all sorts of bad foods! Hamburgers, and chicken, and chocolate!! In my opinion, an addiction to the wrong foods is like an addiction to DRUGS.  My body was craving the wrong foods because that is what I eat all of the time!! I was literally ready to jump out of bed and get into the car and find a McDonalds somewhere! It was really, really bad! But in my heart, I know that if we don't change our ways, bad things can and will happen. After seeing Kris's bloodwork results, I gotta tell ya, they really scared me. And the meds they want to give him can be extremely harmful meds. So, just as I will do anything for my children, I will do what I have to do for my husband too. We are in this together, as we are in everything else we have gone through.

  1. Good job! You are half way done!!! I've been off caffeine for 3 months now, and the craving is completely gone(well, not gonna lie...a Dr. Pepper sounds AMAZING right now, but I don't feel like I HAVE to have it!). But this is the first time EVER that I have been completely without caffeine, it's quite nice!
