Day Two

Here we are on Day Two of our Twelve Day Vegan Diet. I didn't take any pictures today-got busy and forgot. Hopefully, I will get you some photos tomorrow.

Breakfast  Kris had oatmeal leftovers; I had a dairy free, egg free, gluten free waffle with pure maple syrup. Kris drank juice and I had vanilla soymilk again. Those waffles are very good- they are by VANS and come in lots of flavors.

Lunch  We both had the Fast Pizza today. The lunch in the book was an "OLT", aka Onion, Lettuce, & Tomato sandwich- and since this didn't sound very appetizing to either of us, we elected to eat the pita pizzas from yesterday again. I had a few rice crackers with it; and we both drank the V8 Fusion.

Snack  We took Jake to the park today-- it was in the 70s today and he has been begging us to take him to the park.  We figured we would get hungry while we were there so we took cereal bars and water with us for a snack. Jake and I ate ours; Kris still felt full from lunch so he didn't eat any.

Dinner  Spaghetti and Garlic Bread- The sauce I made consisted of onion, mushrooms, fresh parsley, oregano, basil, tomato sauce, tomato puree, and diced tomatoes.  Very yummy! I do not understand why the common brand name bottled sauces that we buy have to use oil as a base for their sauce. There was not a speck of oil in my sauce and it tasted just as good, or BETTER than jarred sauces in the store! It was definitely healthier; and it didn't take but 10 minutes to get it all together in the pot! We used Whole Wheat spaghetti noodles. For the bread, I did cheat a bit and put a tiny bit of EVOO on the bread with the garlic powder. Mainly because I wasn't sure how it would turn out with just the garlic powder. We all had water to drink.

Dessert Jake and Kris had leftover strawberry frozen dessert from last night. I made Sunbeam Tapioca- it's still in the fridge- I will have some in a few minutes. It is supposed to be chilled and firm before you eat it.  This dessert consists of tapioca, lemon juice, pineapple juice, orange juice, lemon juice, mandarin oranges, and crushed pineapple.

My beginning weight last night was 131 lbs. So for all of my old friends who used to complain about me eating all I wanted and never gaining weight, there you go- I gained some weight!! My goal is to lose at least five lbs on this diet.
